Although I’ve had salmon burgers before at a restaurant, I’d never made a burger before with fish myself.  Since I had the good fortune over Labor Day Weekend to catch my first tuna, I’ve had to get creative cooking all the meat.  Here’s one experiment that went really well.  If you happen to have whole tuna, this is a great way to make good use of all the little bits…like from the head, or if they gaff it in the body and the filets don’t come out perfect.  If you want to go spicier, you can add some finely chopped jalapeno or serrano to your mix.  Yields 5-6 burgers.

Spicy Tuna Burgers

1.5 lbs of tuna filets

1/2 of a large white onion

1 egg

seasoned salt

lemon pepper

bread crumbs

1. Finely chop the onion and put in a large mixing bowl

2. Chop up the tuna into small chunks (if you have a meat grinder, you can try it, but I’m afraid of the burger coming out too dry) and add to the mixing bowl

3. Add seasoned salt and lemon pepper (maybe a tbsp each) to mixture

4. Add egg to mixture

5. Add enough bread crumbs bind it all together (1/2 cup?)

6. Get your fingers into it and mix it all together

7. Form into patties

8. Heat some olive oil in a frying pan, and brown the burger.  On the flip, if you like cheese, add to the top of the done side and melt it on.  I like to use pepper jack cheese.

9. While the burger is cooking, prep your bun.  I put a mixture of mayo and green salsa (tomatillo and pasilla peppers) on the bun and put lettuce and tomato on the bottom and avocado slices on the top.

10. Add the burger and enjoy!
